Cornell Cookbook #14: Lemon Bars

Ingredients 

  • 2 cups sifted flour
  • 2 cups granulated sugar
  • ½ cup powdered sugar
  • 1/3 cup fresh lemon juice
  • 1 cup butter
  • ½ tsp baking powder
  • 4 eggs
  • ¼ cup flour

Instructions

  1. Preheat oven to 350 degrees. Sift together 2 cups of flour and the powdered sugar. Cut in butter until the mixture clings together. Press into a 13”x 9”x 2” baking dish.
  2. Bake for 20 minutes at 350 degrees or until lightly brown.
  3. Beat together eggs, granulated sugar and lemon juice. Sift together ¼ cup flour and ½ tsp baking powder. Stir into the egg mixture. Pour over baked crust.
  4. Bake at 350 degrees for 20 – 25 minutes. Let it cool. Sprinkle with powdered sugar. Cut into bars.
