Cornell Cookbook #14: Lemon Bars

Ingredients
- 2 cups sifted flour
- 2 cups granulated sugar
- ½ cup powdered sugar
- 1/3 cup fresh lemon juice
- 1 cup butter
- ½ tsp baking powder
- 4 eggs
- ¼ cup flour
Instructions
- Preheat oven to 350 degrees. Sift together 2 cups of flour and the powdered sugar. Cut in butter until the mixture clings together. Press into a 13”x 9”x 2” baking dish.
- Bake for 20 minutes at 350 degrees or until lightly brown.
- Beat together eggs, granulated sugar and lemon juice. Sift together ¼ cup flour and ½ tsp baking powder. Stir into the egg mixture. Pour over baked crust.
- Bake at 350 degrees for 20 – 25 minutes. Let it cool. Sprinkle with powdered sugar. Cut into bars.
