Cornell Cookbook #13: Grandma Child's Butterscotch Icebox Cookies

Ingredients

  • 1 c butter
  • 2 c brown sugar
  • 2 eggs
  • 3 ½ + c flour
  • ¼ t salt
  • 1 t baking soda
  • 1 t cream of tartar
  • 2 T sour cream
  • 1 t vanilla
  • 1 c chopped walnuts

 

Instructions

  1. Preheat oven to 375
  2. Cream butter and sugar.
  3. Add eggs.
  4. Sift flour, salt, baking soda and cream of tartar.
  5. Add flour mixture to creamed mixture with sour cream and vanilla. Add a bit more flour to make mixture stiff. Add nuts.
  6. Form into two rolls and wrap with waxed paper.
  7. Freeze until stiff.
  8. Slice rolls thinly to form cookies and bake 12 min. until golden brown and crisp.
