Cornell Cookbook #28: Date Balls

Notes: This recipe comes from Amelia’s great grandma and is a family favorite. It started when we decided to all come together over the holidays and have a cookie day. We would spend all day making cookies and then order Chinese food for dinner.



INGREDIENTS

2 cups sugar

2 eggs

1 pound pkg pitted and chopped dates

1 tsp salt

1 cup butter (Grandma only used ½ cup)

2 tsp vanilla

5 cups (you may need more) rice krispies

Shredded coconut

Nuts (optional)

 

INSTRUCTIONS

1. Add to large saucepan: Sugar, eggs, dates, salt and butter.

2. Cook over medium heat until thick, stirring constantly.

3. Remove from heat. Add vanilla and rice crispies, mixing well to incorporate.

4. Working quickly, roll into balls the size of a walnut. Roll in coconut (and nuts if desired).

5. Best stored in the freezer and eaten frozen.
