Cornell Cookbook #4: Challah

Ingredients:
- 2 envelopes YEAST, dissolved in 1 c. warm WATER with 2 tsp. SUGAR.
- ¼ c. SUGAR (can use less)
- 2 tsp.SALT
- ¼ c. OIL
- 2 EGGS
- 5 c. FLOUR
- opt. RAISINS
- opt. SESAME SEEDS
Instructions:
- After dissolving the yeast, wait until if foams.
- Meanwhile, combine next 3 ingredients. Add eggs one at a time. Beat well.
- Add yeast/water mixture.
- Add ½ of flour. Mix. Add the rest.
- Knead until smooth. Add flour as necessary. Opt. add raisins.
- Let it rise 2x in a warm place. (Can preheat oven to 200 degrees and turn off once inside.)
- Shape and let it rise again.
- Can separate dough into 2-3 loaves. Braid pieces.
- Coat with egg glaze. Can add sesame seeds.
- Bake 350 for 20-25 minutes. Don't brown too much
