Cornell Cookbook #20: Auntie June's Baked Sushi

Ingredients:

1) 4 rice cooker cups of uncooked rice

2) 1 jar of Furikake Nori (no salt added)

3) 1 lb. of imitation crab, cut to bite sized pieces and shredded

4) 5 dried shitake mushrooms, soaked and cut into small pieces

5) 1 cup of mayonnaise

6) 1 cup of sour cream

7) 1 bunch of green onions, chopped

8) 2 Tbsp. of tobiko (optional)

9) Sriracha sauce to taste (optional)

10) Korean Nori, cut into sixths

 

 

Directions:

 In a 9x13 casserole pan, layer cooked rice and sprinkle furikake nori till rice is completely covered (you might use the whole jar). Mix the remaining ingredients together (except nori) and spread the mixture on top of the rice. Broil in the oven for about 7 minutes, or until lightly browned. To serve, place a scoop of baked sushi on nori and enjoy!
